Soils
Soils are mostly composed of limestone pebbles and brown clay.
Harvest & vinification
Grapes are harvested at optimum maturity. Separate traditional vinifications are conducted for each grape variety. Alcoholic fermentation occurs at 26-28°C with a two weeks’ maceration period. Malolactic fermentation. Blending and bottling of the wines.
Grape Varieties
Grenache – Syrah – Cinsault – Mourvèdre
Tasting
A deep garnet color with deep purple hints. An explosive bouquet of ripe and cooked fruits with notes of fig. The mouth is ample and dense with soft rounded tannins. The long finish is all about finesse and elegance.
Wine & food matching
Perfect with a rabbit stew.
Serve at 15-16°C. Open before serving.
Best enjoyed between 2 to 5 years of age.
